.........Bak Kut Teh - Pork Ribs in Spices and Herbal Soup........


Ingredients
800 gram pork ribs
2 liter water
10 gram angelica root (Chinese: dang gui)
5 gram Sichuan lovage rhizome (Chinese: chuan xiong)
1 head garlic (Indonesian: bawang putih), peeled and lightly bruised
1 cinnamon stick (Indonesian: kayu manis)
1 star anise (Indonesian: bunga lawang/pekak)
5 cloves (Indonesian: cengkeh)
2 tablespoon dark soy sauce
1 tablespoon soy sauce
2 teaspoon salt
1 teaspoon sugar
8 fresh shiitake (Indonesian: jamur shiitake), remove stems and cut into bite size pieces
8 deep fried tofu (Indonesian: tahu goreng), blanched in hot water and cut into bite size pieces
1 tablespoon wolfberry fruit (Chinese: gou gi zi)
Chili and garlic soy sauce (mix the following together)
3 green Thai chilies (Indonesian: cabe rawit hijau)
3 red Thai chilies (Indonesian: cabe rawit merah)
3 cloves garlic (Indonesian: bawang putih)
3 tablespoon soy sauce
Instructions
Place pork ribs and water in a soup pot and bring to a boil. Keep removing the scum until the soup is clear.
Once the soup is clear, add angelica root, lovage rhizome, garlic, cinnamon, star anise, and cloves. Season with dark soy sauce, soy sauce, salt, and sugar. Once it boils again, reduce heat, cover the pot with a lid, and simmer for 1 hour, or until the pork is cooked and tender.
Add shiitake, tofu, and wolfberry fruit into the pot. Bring to a boil again, and cook for another 10 minutes. Adjust with salt and sugar as needed.
Turn off heat, and serve hot with the chili and garlic soy sauce accompanied with a bowl of steamed white rice.

ingredients (serves 4-6 people)

1 kg chicken pieces (thighs & drumsticks work best)
1/2 onion, diced
3 kaffir lime leaves (for garnish)
4 shallots, thinly sliced and deep-fried (for garnish)
2 eggs, hard-boiled (for garnish)
3 tablespoons groundnut or vegetable oil
For the blended curry paste (“rempah”):

3 large red chillies, deseeded
6 dried chillies, deseeded
2 stalks of lemongrass, roughly chopped
8-10 small shallots, halved for ease of blending
1 clove garlic
6 candlenuts (a.k.a ‘buah keras’ – use macadamia nuts as an alternative)
4 cm length of galangal (thumb-nail size in cross-section)
2 cm length of fresh ginger(thumb-nail size in cross-section)
2 cm length of fresh turmeric (fresh turmeric is preferable, otherwise 2 tsp of dried turmeric will do)
2 tablespoons fermented shrimp paste (‘belacan’), toasted in a dry pan before use
1 tablespoon tomato puree
1 tablespoons of sugar
For the seasoning:

Large pinch of salt (to taste)
1 – 1.5 tbsp of Brown Sugar (to taste)
2 – 3 tbsp of Soya Sauce (to taste)
Juice of 1/2 – 1 lime (to taste)
Method
Prepare and blend all the curry-paste (‘rempah’) ingredients in a large food processor until it forms a paste. It’s best to blend the lemongrass and candlenuts first before adding the rest to avoid overblending some of the other softer textured ingredients.
Heat up the oil in a large lidded pot and sauté the ‘rempah’ (curry paste) and chopped onions on a medium-high heat for 8 – 10 minutes until fragrant. Add a tablespoon or 2 of water if it starts to dry, and constantly stir – the aim is to toast the paste without burning it.
Add the chicken pieces to the fried rempah and continue frying for 3 – 4 minutes until you get some nice colouration on the meat. Add half a cup of water (~100 ml) to loosen the curry paste (it should still retain a relatively thick, coating consistency after you have added the water). Reduce the heat and simmer for 30-35 minutes with the lid on until the chicken is cooked and tender. Stir and turn the chicken pieces over every 10 minutes or so.
While the chicken is simmering, hard-boil the eggs (for 8-10 minutes) and deep fry the thinly sliced shallots until crispy and golden for garnish.
When the chicken is cooked, season with salt, brown sugar, soya sauce and a squeeze of lime juice to taste. Garnish with kaffir lime leaves, sliced hard-boil eggs, crispy shallots and serve with steamed rice.

Malaysian Style Yong Tau Foo

Ingredients

1 Recipe of Fish Paste (Click here)
1 Recipe of Stuffed/Filled Fish Paste With Assorted Vegetables (Click here)

3 Cups of Chicken Stock
3 Scallions, chopped
White Pepper, to taste
Sea Salt, to taste

Sweet Sauce
Chili Sauce

Method

Deep- fry the filled vegetables and bean curd on medium heat, until golden brown in color. Drain well.

Bring the chicken broth to a boil and add the pan fried Yong Tau Foo and cook for about 5 minutes. To serve, top with some chopped scallions.
