At 9am u put it out to defrost and mix it wth salt and pepper for abt 1-1.5 hr. at 11am u grill the 'contra' red meat with a temp of 405 deg celcius slowly until 12pm. Remember 405c not less otherwise the 'contra' meat wl not cook inside. Once the red meat changed to a brownish with no more 'blood' color, u could take it out and hv it for lunch at after 12...he..he.. This is our signature dish here onboard of our train. 'Contra Del Sole'! Happy Trying!
